Some things in life need to be enjoyed in their simplest form. Fish baked in a salt crust is a perfect example of this. It’s simple but absolutely brilliant. The salt encloses the fish completely, add extra flavour the fish and sealing in the moisture, making the flesh succulent

 

Ingredients : 500g fish per person, cleaned from inside, but left with scales, 1.5kg salt, 2 egg whites.

Linguini Rizzi

This seafood pasta dish is heavy on the ocean flavor, but light on the amount of actual seafood you’ll find “floating” in it. This ain’t no Red Lobster seafood pasta dish. No, this is a refined and sophisticated seafood pasta dish. I like to think that the pasta in this dish is simply a delivery device for the seafood sauce.

 

Ingredients 500g linguini, One tub of sea urchin meat ,20g minced garlic mixed with olive oil, parsley, Cherry tomatoes, Salt and pepper for seasoning, 250ml white wine.
